This is a popular tea time cookie which is crisp and crumbly but light and buttery at the same time. ?
I am sharing the recipe of these amazing cookies below. I have used all purpose flour for these recipes which can be easily replaced by wheat flour.


Ingredients:
75gms all purpose flour
25 gms Gram flour/Besan
1tbsp semolina(sooji)
¼ tsp baking powder
½ tsp green cardamoms
60 gms powdered sugar
70 gms ghee + 5 gms(if needed)

Temperature: 355 F
Line a baking trays with baking paper.
1. All purpose flour + gram flour + semolina + baking powder + green cardamoms + powdered sugar = Sieve together
2. Start by adding 65 gms of room temperature ghee and start bringing the flour together to make stiff dough. Add one tsp ghee at a time if needed depending on room temperature.
3. Make 18-20 gms balls out of dough.
4. Slightly flatten and make design using fork
5. Bake for 12-14 minutes until golden brown
6. Cool completely on a wire rack
7. Enjoy with milk or tea
